A Taste of Home: A Light Americana Plate (Honoring Your Strength)

Hi Everyone!
May brings us Memorial Day. It’s a time to pause, reflect, and honor strength, sacrifice, and resilience.
For many families, it also means gathering around food that feels like home. But if you’re living with a disability, heavy meals, long days, and social energy can feel like a lot.
So this month, we’re keeping things simple, balanced, and nourishing with a Light Americana Plate, all the flavors of a classic cookout, just a little gentler on the body.
Because honoring yourself matters, too.
The Recipe: A Light Americana Plate
All the comfort of a backyard meal, without the heaviness.
Ingredients:
- Chicken breast or turkey burger
- Corn (grilled or boiled)
- Mixed greens or spinach
- Cherry tomatoes
- Olive oil + lemon juice
- Optional: whole grain roll
- Salt & pepper to taste
Instructions:
- 1. Grilled Chicken Breast / Turkey Burger Season with salt, pepper, and a drizzle of olive oil. Grill or pan-cook over medium heat for about 5–7 minutes per side until fully cooked through.
- 2. Corn (Grilled or Boiled) For grilling, place directly on the grill and turn occasionally until lightly charred, about 8–10 minutes. For boiling, cook in salted water for 5–7 minutes until tender.
- 3. Mixed Greens / Spinach + Cherry Tomatoes Rinse and pat dry, then toss together in a bowl. Drizzle with olive oil and lemon juice, and lightly season with salt and pepper.
- 4. Whole Grain Roll (Optional) Slice in half and warm lightly in the oven or toaster for a few minutes. Add a small spread of butter or olive oil if desired.
Nana’s Tip: Low energy? Use pre-cooked chicken or rotisserie. You don’t need to do it all to do it right.
