Hash It Out: A Breakfast Recipe (and Disability Mindset) That Makes the Most of What You’ve Got

Hi Everyone!
It’s April—a season of fresh starts and clearing things out. Some people call it spring cleaning, but I like to think of it as making room for what matters.
That’s the spirit behind this month’s Nana’s Nuggets recipe: a Breakfast Hash made with leftovers, love, and a little creativity. Whether you’ve got leftover corned beef, ham, or any other cooked meat sitting in the fridge, this recipe gives it new life, just like we do when we take a messy, overwhelming disability situation and turn it into a plan.
Because here’s the truth:
Life doesn’t always hand us something shiny and new. But we can still make it work. And make it beautiful.
The Recipe: Nana’s Breakfast Hash
This is comfort food you can feel good about: simple, hearty, and perfect for using what you already have.
Ingredients:
- 1–2 cups cooked meat (corned beef, ham, leftover roast, etc.), diced
- 2–3 medium potatoes, diced
- 1/2 cup bell peppers (any color), diced
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- Salt & pepper to taste
- Eggs and toast, for serving
Instructions:
- In a large skillet, heat olive oil and sauté the onions, peppers, and garlic until fragrant.
- Add the diced potatoes and cook until browned and fork-tender.
- Stir in the tomato paste and leftover meat. Cook until heated through and well combined.
- Serve with fried or poached eggs and toast on the side.
Nana’s Tip: Got picky eaters at home? Top with cheese, hot sauce, or even ketchup; whatever helps get a little nutrition in!
