And yes, we’re also making one of my grandkids’ all-time favorites: homemade chicken nuggets. Crispy, easy, and baked—not fried. Let’s dig in.
The Recipe: Nana’s Oven-Baked Chicken Nuggets
Here’s what you’ll need:
- 2 boneless, skinless chicken breasts (cut into bite-sized chunks)
- 1 cup seasoned bread crumbs or panko
- ½ cup flour
- 2 eggs (lightly beaten)
- A pinch of salt and pepper
- Cooking spray
Step-by-Step Instructions:
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- Set up your “mise en place”, that means have your flour, egg, and breadcrumbs/panko each in separate bowls, lined up and ready.
- Dip each chicken piece first in flour, then egg, then breadcrumbs.
- Place on the baking sheet and lightly spray with cooking spray.
- Bake for about 15 minutes, flipping halfway through for an even golden crisp.
Pro tip: For a healthier option, use crushed almonds or other nuts to replace breadcrumbs.
