Flourless Chocolate Cake & Unapologetic Self-Love: A Valentine’s Day Message for the Disability Community

Hi sweethearts,
It’s February, and love is in the air! Today, I want to talk about a kind of love that isn’t wrapped in roses or cards. I want to talk about loving yourself through the hard seasons, especially when you’re navigating the overwhelming world of disability.
This month on Nana’s Nuggets, I’m sharing a decadent Flourless Chocolate Cake recipe—flourless, rich, and unapologetically indulgent. Just like you deserve to be.
Because whether you’re waiting on an answer from Social Security, in the middle of an appeal, or just gathering the courage to ask for help, you deserve to feel cared for. Not just by us, but by you.
The Recipe: Flourless Chocolate Cake
This cake is dense, dreamy, and made with just a few ingredients. It’s gluten-free, naturally low-carb, and perfect for treating yourself or someone you love.
Ingredients:
- 1 lb bittersweet chocolate (high-quality recommended)
- 1 cup (2 stick) unsalted butter
- 6 large eggs
Instructions:
- Preheat your oven to 425°F. Grease an 8 or 10-inch springform pan.
- Melt the chocolate and butter together over a double boiler or in short bursts in the microwave, stirring until smooth.
- In a separate bowl, beat the eggs until they triple in volume (about 5–6 minutes).
- Gently fold the egg mixture into the chocolate.
- Pour into your pan and bake in a water bath (larger pan filled with an inch of water) for 5 minutes, then cover with tin foil and back for another 10 minutes.
- Cool completely and refrigerate before slicing. Serve with love. 💕
Nana’s Tip: This cake freezes beautifully because sometimes, love is knowing future-you will need a slice too.
